    Didi Pratz 1 second ago We made these last weekend with chuck shoulder roast, and they were SO good! Totally worth waiting on the Guajillo and Pasilla peppers to arrive from Amazon, since none of our groceries carry anything except Ancho. Perfectly roasted in the oven, and saved the sauce for tacos! Thank you for the inspiration - we watch you all the time.

    Got some of these going right now. Using 2 lbs of Elk and 1lb of stew beef. The sauce is amazing. I’m just hoping the Elk isn’t too dry since it has so little fat. I’d love to see what you could do with some Elk or Bison, or some kind of semi-exotic meat.

    I realized I knew the difference between mutton and lamb because in the midwest they had rodeos and "mutton busting" is often an "opening act" to the bull riding...kids up to age 6 or so ride a sheep like a bull. The sheep had to be a certain age..lol mutton age 😅 it always made me really sad so I blocked it out of my mind until this video. It was funny watching kids fall off and get stepped on😆 I don't hate kids, I just don't know that a sheep really wants to be ridden. Wow, what a weird flashback from 20+ years ago. Thanks Sam haha!

    Oh man! This is so good. I only had rump steak but it worked fine. I also changed the chilli's to Kashmir chilli since there is no Mexican stuff in new Zealand. I also swapped to Chipotle sauce and smoked paprika. It worked fine. Hi. One of my fave meals. Thanks for the video👍

    HI Sam. I do really cook up much of what you make, right? And I do it in real time as you cook, so I don't have to look at a recipe. So I made this dish. Followed your video. My friend, this thing is way too fatty. I'm no liberal/democrat/bratty/vegan pain in the butt 20-something girl. It's hugely fatty. This isn't a complaint, not bitching. I grew up in Alabama & San Antonio, I know potted meat, spiced or not. When everything cooks down in the Dutch Oven post 2 hours, you've gotta fight for meat. And once you've gotten rid of the blubber, you've got like 4 ounces of meet. Just saying. And I love your video clips, not being a douche. Love you, man. B

    I made these tacos this weekend and they were amazing! I had to substitute dried ancho chilies for the pasilla chilies (couldn’t find in rural Notheast Ohio) but dipping the tortillas (I used corn) in the juices before frying is key. I also made a consommé with the juice (just added additional beef broth after removing the meat) as an accompaniment similar to traditional birria. Definitely recommend.

    That looks horrible, dead cow mixed with chilli tomato sauce garlic onions and cheese made from milk meant for the calf’s to drink!Absolute poison!!! Nah only joking, the only way I could ever become a vegetarian or even worse a vegan is if we could eat meat, chicken, fish, drink milk, eggs and cheese! Then if that was allowed I would be one. Truth is this is the very first proper Mexican dish I’ve made. In the uk all we ever see is texmex old elpaso stuff. Well I’ve ordered all the gear on line, and I’m gonna make some genuine Mexican food x

    Made these with some elk. Wowsa! I also lived in Mexico for a few years and had some amazing birria de borrego. Make sure to put some lime and salt on those tacos as well! Thanks for the video!
